Cardamom Rice Pudding

Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 3-4 green cardamom pods, crushed
  • 1 tsp vanilla extract
  • Raisins (optional)

Directions

  1. Rinse the rice in a fine mesh strainer until the water runs clear.

  2. In a medium saucepan, bring the water to a boil over high heat. Add the rice, stir, and reduce the heat to low. Cover and simmer for 18 minutes.

  3. Remove from heat and let sit, covered, for 5 minutes. Then fluff the rice with a fork.

  4. In a separate saucepan, combine the milk, cream, sugar, salt, and crushed cardamom pods. Bring to a simmer over medium heat.

  5. Stir in the cooked rice and raisins (if using) and cook, stirring frequently, until the pudding thickens and the rice is tender, about 15-20 minutes.

  6. Remove from heat and stir in the vanilla extract.

  7. Serve warm or chilled, garnished with additional raisins or a sprinkle of ground cardamom, if desired.
