Soft, chewy ginger cookies made with Organic Ginger Powder, molasses, and warm spices — a classic homemade cookie with bold, fragrant ginger flavor and a crackled sugar crust.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1/3 cup granulated sugar
For Rolling
Directions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper
- Whisk together flour, Organic Ginger Powder, baking soda, cinnamon, cloves, and salt in a medium bowl
- Beat softened butter and sugar together until light and fluffy, about 2–3 minutes
- Beat in the egg, then add molasses and vanilla extract — mix until combined
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined
- Place the extra sugar for rolling in a small bowl
- Scoop dough into 1.5-tablespoon balls and roll each one in sugar until fully coated
- Place balls 2 inches apart on the prepared baking sheets
- Bake for 10–12 minutes until edges are just set but centers still look slightly soft
- Cool on the baking sheet for 5 minutes before transferring to a wire rack
Recipe Note
Pull cookies from the oven when centers still look slightly soft — they firm up perfectly as they cool and stay chewy for days.
