Creamy, fragrant Indian Rice Kheer slow-simmered with Organic Green Cardamom Pods, whole milk, basmati rice, saffron, and pistachios — a classic Indian rice pudding dessert.
Ingredients
- 1/4 cup basmati rice, rinsed and soaked 20 minutes
- 4 cups whole milk
5-6 Organic Green Cardamom Pods, lightly cracked
- 1/3 cup granulated sugar
- A pinch of saffron strands, bloomed in 1 tbsp warm milk
- 2 tablespoons crushed pistachios
- 2 tablespoons golden raisins (optional)
- Extra saffron strands
Garnish
Directions
- Rinse and soak basmati rice in cold water for 20–30 minutes
- drain
- Pour whole milk into a wide heavy-bottomed saucepan
- add lightly cracked Organic Green Cardamom Pods
- bring to a gentle boil over medium heat, stirring frequently
- Add drained rice
- reduce heat to low and simmer uncovered, stirring every 3–4 minutes, for 25–30 minutes until rice is tender and milk has thickened to a creamy consistency
- Add sugar and bloomed saffron
- stir well and simmer 5 more minutes
- Taste and adjust sweetness
- remove from heat
- Stir in crushed pistachios and golden raisins if using
- Serve warm in bowls or refrigerate until chilled
- garnish with extra pistachios and saffron strands
Recipe Note
