No-bake energy balls made with Organic Amla Powder, Medjool dates, almonds, and coconut — a naturally tangy, sweet snack that comes together in minutes with no cooking required.
Ingredients
- 1 cup Medjool dates, pitted (about 12 large dates)
- 1 cup raw almonds
- 1/2 cup rolled oats
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 pinch of salt
- 1/3 cup shredded unsweetened coconut
For Rolling
Directions
- Add almonds to a food processor and pulse until coarsely chopped, about 10-15 seconds
- Add dates, rolled oats, Organic Amla Powder, vanilla extract, honey, and salt
- Process until the mixture comes together and holds its shape when pressed between your fingers, about 30-45 seconds
- If the mixture is too dry, add 1 teaspoon of water at a time and pulse again
- Spread the shredded coconut on a plate
- Scoop about 1 tablespoon of the mixture and roll into a ball with your hands
- Roll each ball in the shredded coconut until fully coated
- Place on a parchment-lined tray and refrigerate for 20-30 minutes before serving
