1/2 cup fenugreek seeds, soaked in water for 2 hours
2 cups fresh basil leaves
1/2 cup pine nuts
2 cloves garlic
1/2 cup grated parmesan cheese
1/2 cup extra-virgin olive oil
Salt and pepper, to taste
Directions
Drain and rinse the soaked fenugreek seeds.
In a food processor, combine the fenugreek seeds, basil leaves, pine nuts, garlic, and parmesan cheese. Pulse until well combined.
Slowly pour in the olive oil while the food processor is running, until the mixture becomes a smooth paste.
Season with salt and pepper to taste.
The pesto can be served immediately, or stored in an airtight container in the refrigerator for up to a week.
