Organic Onion Granules — USDA Certified, Non-GMO | Marinades, Slow Cooking & Spice Rubs
Organic Onion Granules from Spicy Organic are the coarser, more textured sibling of onion powder — made from the same premium Allium cepa onions grown on certified organic farms in India, but ground to a sandy, granular texture that behaves differently in the kitchen. Where onion powder dissolves invisibly into smooth sauces and dressings, onion granules hold their texture in dry rubs, create a more pronounced flavor bite in bread and crusts, and rehydrate more slowly in long-cooked dishes — releasing their savory depth gradually rather than all at once. No artificial preservatives, no irradiation, no additives. USDA Certified Organic, Non-GMO, and gluten-free.

Onion granules vs. onion powder — which one do you need?
Both are made from dehydrated onions — the difference is grind size, texture, and best application:
- Onion granules (this product) have a coarse, sandy texture — visible as small particles, similar to coarse sea salt in consistency. They hold up in dry rubs where visible texture contributes to crust formation, rehydrate slowly in long-cooked dishes for a more gradual flavor release, and add a pleasant subtle onion presence in bread doughs and meatballs where you want distributed flavor with occasional textural notes. Best for: dry rubs, bread and flatbreads, burgers and meatloaf, roasted dishes, and any application with a longer cook time.
- Onion powder is finely ground — it dissolves completely and invisibly into sauces, gravies, dressings, and batters with no detectable texture. Best for: smooth soups and sauces, vinaigrettes, mac and cheese, quick dips, and applications where you want zero texture. See our Organic Onion Powder.
- Use both: Many professional spice blends and seasoning mixes use both granules and powder together — granules for texture and slow release, powder for background base note. Together they create more complex, layered onion flavor than either alone.
Substitution ratio (granules to fresh onion):
- 1 small onion = ¾ tsp onion granules
- 1 medium onion = 1½ tsp onion granules
- 1 large onion = 2 tsp onion granules
- 1 tbsp fresh minced onion = ½ tsp onion granules
Why organic onion granules — what matters
Onions are a high-pesticide-residue crop when grown conventionally. The USDA Pesticide Data Program consistently identifies multiple pesticide residues on conventionally grown onions — and the dehydration and concentration process used to make granules concentrates whatever is present in the raw onion. Choosing organic means the onions were grown without synthetic pesticides, herbicides, or chemical fertilizers, and that commitment carries through every granule.
Our onions are sourced from USDA Certified Organic farms in India — primarily Maharashtra and Karnataka — where the region's dry climate and alluvial soils produce onions with high dry matter content. Higher dry matter means more concentrated onion flavor per gram of finished granule.
How to use onion granules — with quantities
Dry rubs and BBQ seasoning (where granules outperform powder):
- All-purpose BBQ rub (per lb of meat): 1½ tsp onion granules + 1 tsp garlic granules + 1 tsp smoked paprika + ½ tsp black pepper + ½ tsp salt + ¼ tsp cayenne. The granule texture creates a more pronounced crust on brisket, ribs, and chicken than powder alone — the granules caramelize slightly on the surface during high-heat cooking. Pairs naturally with our Organic Garlic Granules.
- Steak seasoning: Combine 1½ tsp onion granules + 1 tsp garlic granules + 1 tsp coarse salt + ½ tsp black pepper. Press onto both sides of steak 30 minutes before cooking.
- Roasted vegetable seasoning: Toss vegetables in olive oil, then add 1 tsp onion granules + ½ tsp garlic granules + salt and pepper. The granules rehydrate and caramelize during roasting — excellent on potatoes, carrots, cauliflower, and zucchini.
Bread, flatbread, and baked goods (granules' unique advantage):
- Onion bread or focaccia: Add 1½ tsp onion granules directly to bread or pizza dough during mixing. The granules rehydrate during the prove stage, distributing evenly throughout the loaf. Scatter an additional ½ tsp over the surface of focaccia before baking — they toast into the crust beautifully.
- Cornbread: Add 1 tsp to cornbread batter alongside jalapeño and cheddar for a savory, aromatic variation.
- Crackers and flatbreads: Incorporate 1 tsp into cracker dough or scatter over flatbread before baking for a savory, aromatic crust.
Ground meat dishes (burgers, meatloaf, meatballs):
- Burgers (per lb ground meat): 1½ tsp onion granules mixed directly into the meat with salt, pepper, and Worcestershire sauce. Granules distribute evenly throughout the patty and rehydrate during cooking — no raw onion texture, no moisture loss from fresh onion. Best burger seasoning technique for consistent results.
- Meatloaf: Add 1½ tsp onion granules + 1 tsp garlic granules to 1 lb ground meat alongside eggs, breadcrumbs, and tomato paste. The granules add onion flavor throughout the loaf without the moisture and texture variation of fresh onion.
- Meatballs (per lb ground meat): 1 tsp onion granules produces evenly seasoned meatballs — more consistent than grating fresh onion into the mix.
Soups, stews, and slow-cooked dishes:
- Soups and stews (serves 4–6): Add 1–2 tsp early in cooking alongside fresh aromatics. Granules dissolve slowly into broth over long cooking, adding consistent onion depth without fresh onion texture.
- Slow cooker dishes: Add 1–2 tsp to pot roast, pulled pork, or chicken braises at the beginning. The granules have time to fully rehydrate and meld into the braising liquid over long cook times.
- Rice and grain dishes: Add ½–1 tsp to cooking water for rice, quinoa, or couscous for a savory, aromatic base.
Sourced from India — Maharashtra and Karnataka
India is one of the world's largest onion producers, and Maharashtra and Karnataka — particularly the Nashik and Belgaum regions — are India's primary onion-growing belts. The semi-arid climate and well-drained soils produce onions with exceptionally high dry matter content — a critical quality factor for dehydrated onion products, as higher dry matter means more concentrated flavor and aroma per gram of finished granule. Our granules are sourced from USDA Certified Organic farms in these regions, dehydrated at controlled temperatures, and granulated to a consistent coarse grind.
Why Spicy Organic onion granules
- USDA Certified Organic, every batch: Cert #0847519, Texas Department of Agriculture. No synthetic pesticides or fertilizers — important for a concentrate product where residues magnify.

Storage and shelf life
Store in a cool, dry place away from heat, steam, and direct sunlight. Keep the resealable pouch tightly sealed between uses. Organic onion granules retain peak flavor and potency for 3–4 years when properly stored. If granules clump, they have absorbed moisture — break apart with a dry spoon and use normally; flavor is completely unaffected. Do not store near the stove or dishwasher where steam accumulates.

Frequently asked questions
What is the difference between onion granules and onion powder?
Onion granules are coarsely ground — a sandy, slightly gritty texture similar to coarse sea salt. They hold up in dry rubs where texture helps form a crust, rehydrate slowly in long-cooked dishes, and add distributed flavor with subtle textural notes in bread and meatballs. Onion powder is finely ground and dissolves completely and invisibly into smooth sauces, dressings, and batters. Both are made from dehydrated onions. Both are available from Spicy Organic. Many spice blends use both together for layered flavor.
How much onion granules equals one onion?
Use ¾ tsp onion granules for a small onion, 1½ tsp for a medium onion, and 2 tsp for a large onion. For minced onion, ½ tsp granules replaces 1 tablespoon fresh minced onion. Onion granules are slightly more concentrated by volume than onion powder — start at the lower end and adjust to taste.
Are onion granules better than onion powder for burgers?
For burgers and meatloaf, granules are generally preferred over powder — the slightly coarser texture distributes more evenly through ground meat without creating a paste-like consistency, and the granules rehydrate during cooking to deliver pockets of savory onion flavor throughout the patty. Use 1½ tsp per pound of ground meat mixed directly into the meat before shaping.
Why are my onion granules clumping?
Clumping is caused by moisture absorption and is completely normal for onion granules without anti-caking agents — which ours do not contain. Break clumps with a dry spoon — flavor and quality are fully intact. Store tightly sealed away from steam to minimize clumping over time.
Can I use onion granules in bread dough?
Yes — and granules work better than powder in bread dough. Add 1–1½ tsp per standard loaf directly into the dough during mixing. The granules rehydrate during the prove stage and distribute evenly throughout the bread, creating consistent onion flavor in every slice. Scatter additional granules over focaccia or flatbread before baking — they toast into the crust with excellent caramelized flavor.
Is Spicy Organic onion granules USDA certified organic?
Yes. Our Organic Onion Granules are USDA Certified Organic under Regulations 7 CFR Part 205, Certificate Number 0847519, issued by the Texas Department of Agriculture. Sourced from certified organic farms in Maharashtra and Karnataka, India. Non-GMO, gluten-free, non-irradiated, and 100% pure dehydrated onion with no additives, anti-caking agents, or fillers.
