The savory cheese and spicy black pepper in these puffs create a crave-worthy experience. A classic French choux pastry recipe that combines cheese and pepper to create a savory pastry, like a popover. Peppered cheese puffs are crispy on the outside, but remain custardy on the inside, it is the best flavor and textural experience of both worlds.
Ingredients
2 cups water
160 grams butter
1 teaspoon salt

½ teaspoon organic black pepper, lightly crushed
280 grams all-purpose flour
8 eggs
360 grams hard cheese, shredded or grated (parmesan, gruyere, asiago, etc.)
Directions
Preheat oven to 425 degrees Fahrenheit.
Add water, butter and salt to a large saucepan. Heat on medium until butter is completely melted.
Bring mixture to a boil. Turn the heat to low and immediately add flour all at once, quickly stirring constantly until the dough pulls away from the sides of the pan, forming a large ball.
Use an electric mixer on low speed to mix dough, aiming to cool it down, for about 2 minutes.
Add eggs one at a time. Mix on medium to medium-high speed until each egg fully incorporates.
Scrape the bowl between additions as necessary and continue mixing on medium-high speed until smooth.
Mix in organic black pepper and cheese until evenly distributed throughout the dough.
Scoop large spoonsful of dough, about ¼-1/3 cup each, onto parchment lined sheet pan.
Bake for 10 minutes at 425. Turn down the temperature to 350 degrees and continue baking for 20-30 minutes, until golden brown.
Recipe Note
Enjoy your creativity by experimenting with different types of cheese, herbs and spices. This recipe is easily adapted to include new flavor profiles, though the classic gruyere and black pepper is decidedly the crowd favorite.
