Ingredients
2 packs of dried ramen noodles
4 cups of chicken or vegetable broth
2 cloves of garlic, minced
1 inch of ginger, peeled and grated
2 tablespoons of soy sauce
1 tablespoon of sesame oil

1 teaspoon of chili flakes (optional)
2 cups of sliced mushrooms (optional)
2 green onions, thinly sliced
2 eggs, soft boiled and halved
Sesame seeds and chopped cilantro, for garnish
Directions
Cook the ramen noodles according to the package instructions and set aside.
In a large saucepan, heat the broth, garlic, ginger, soy sauce, sesame oil, and chili flakes (if using) over medium heat until simmering.
Add the sliced mushrooms (if using) to the broth and cook for 2-3 minutes, until tender.
Divide the cooked ramen noodles into four serving bowls.
Ladle the broth and mushrooms over the noodles in each bowl.
Top each bowl with a soft boiled egg half and sprinkle with sliced green onions, sesame seeds, and chopped cilantro.
Serve immediately and enjoy!

- Noodles: You can use any type of dried or fresh ramen noodles for this recipe. Look for noodles that have a good texture and hold up well in broth.
