Ingredients
1 large yellow onion, finely diced
3 tablespoons coriander seeds
½ teaspoon cayenne pepper
¼ cup vegetable oil
1 can white beans (about 15 ounces), mashed
½ teaspoon salt
2 tbsp of chopped green onion
2 limes, juiced
Directions
Heat oil in a large skillet on medium heat
Add cumin and cook for 30 seconds
until it smells toasty.
Add coriander seeds, cayenne pepper
and onion and continue to cook, stirring occasionally, for about 5 minutes.
Once the onions are translucent, remove them from
heat and add mashed white beans, salt, and lime juice.
Mix until evenly incorporated.
Finally garnish with chopped green onion.
Serve with tortilla chips, bread and/or
vegetables for dipping.
