The textural contrast between smooth yogurt and crispy spices makes this a playful dish to enjoy. Drizzling spice infused oil atop the yogurt transforms a few humble ingredients into a pretty, eye-catching appetizer. Paired with fresh vegetables, it is perfect for light summer snacking. The simplicity in this dish makes it a joy to prepare.
1 cup plain whole milk yogurt
1 garlic clove, grated
1 cup chopped cucumber
1 teaspoon lemon juice
2 tablespoons olive oil
1 ½ teaspoons organic fenugreek seeds
¼ teaspoon cayenne pepper
½ teaspoon asafetida
1 bunch fresh dill
Mix together yogurt, garlic, chopped cucumber and lemon juice in a bowl. Set aside.
In a small saucepan over medium heat, warm the
oil.
Add organic fenugreek seeds, cayenne pepper and asafetida. Remove from heat immediately and allow to cool to room temperature.
Drizzle cooled oil mixture over top of the yogurt mixture.
Garnish with some fresh dill.
Serve with fresh vegetables or pita bread for dipping.
