Garam Masala Grilled Shrimp Skewers with Charred Lime
Garam Masala Grilled Shrimp Skewers with Charred Lime
Quick-marinated shrimp pick up a smoky, warmly spiced crust from garam masala and red chili powder, then hit the grill hard and fast. A cooling coriander-lime yogurt dip and charred limes bring it all together for a weeknight dinner that tastes like a backyard party.
What You'll Need
A short marinade and a hot grill are all these skewers ask for.
The Shrimp & Marinade
- 1.5 lbs large shrimp, peeled and deveined, tails on
- 2 tbsp Organic Coconut Oil, melted
- 1 tbsp Organic Garam Masala
- 1 tsp Organic Red Chili Powder
- 1 tsp Organic Garlic Granules
- 1 tsp Organic Ginger Powder
- 1 tsp Himalayan Pink Salt
- 1 lime, juiced
For Grilling & Serving
- 2 limes, halved, for grilling
- 1 cup plain whole-milk yogurt
- 1/2 tsp Organic Coriander Powder
- 2 tbsp chopped fresh cilantro
- 8-10 wooden or metal skewers
- Warm naan or rice (optional, for serving)
Step by Step
Mix the marinade
In a bowl, whisk melted coconut oil, garam masala, red chili powder, garlic granules, ginger powder, salt, and lime juice into a thick paste.
Marinate the shrimp
Toss the shrimp in the paste until every piece is coated. Cover and refrigerate for 20 to 30 minutes β any longer and the lime juice starts to make the texture mushy.
Skewer and preheat
Thread the shrimp onto skewers, 4 to 5 per skewer, leaving a little breathing room between each so they cook evenly. Preheat the grill to medium-high, about 400Β°F.
Make the dip
While the grill heats, stir yogurt, coriander powder, a pinch of salt, and chopped cilantro together in a small bowl. Chill until ready to serve.
Grill the shrimp
Oil the grill grates well, then lay the skewers down along with the halved limes, cut side down. Grill the shrimp 2 to 3 minutes per side until pink, curled, and lightly charred at the edges. Grill the limes about 3 minutes, until caramelized.
Serve
Arrange the skewers on a platter with the charred limes for squeezing over the top and a generous dollop of coriander-lime yogurt dip on the side.
Double up skewers side by side (two skewers through each row of shrimp) so they don't spin when you flip them β a small trick that keeps the char even on both sides.
The Spices Behind the Skewers
Common Questions
Can I use frozen shrimp?
Yes. Thaw completely and pat very dry before marinating so the paste clings rather than sliding off in the fridge.
What if I don't have a grill?
A cast-iron skillet or grill pan over high heat works well. Sear 2 to 3 minutes per side, working in batches so the pan stays hot.
Can I marinate longer for more flavor?
Stick to 30 minutes. Because of the lime juice, longer marinating can start to break down the shrimp's texture and make it rubbery once cooked.
Is this recipe very spicy?
It lands in medium territory. For a milder version, cut the red chili powder in half; for more heat, add a pinch of red chili flakes to the marinade.
What pairs well with these skewers?
Warm naan, coconut rice, or a simple cucumber salad all round out the plate nicely alongside the yogurt dip.
