Best Mexican Chicken Recipe
Chicken is good for health – it is a white meat and rich in protein. It is a lot healthier than red meat, which is high in saturated fat. This chicken, with flavors of Mexico, is quick and easy to make and very versatile.

When you want to have chicken with a Mexican flavor, this is the right dish. You can pair it with rice (plain or Mexican style) or tortillas. Add some sour cream and guacamole and some nacho chips on the side for taste and crunch.
Ingredients
2 tbsp blanched almonds or cashews
150 gm. green tomatoes, chopped
1-2 jalapenos, chopped
1 medium onion, chopped
2 tbsp. chopped coriander leaves
2 cloves garlic, chopped
Salt to taste
4 tbsp. oil
1 tsp. cumin powder
½ tsp. paprika
1/2 kg or little more 1 lb chicken
6-8 olives, chopped
1 cup colored peppers, chopped
Lemon wedges for garnishing
Directions
Soak almonds in warm water for 5 minutes, then skin them. If you are using cashews, use them as they are.
In a blender or food processor, blend the tomatoes, jalapeno, onion, coriander leaves, garlic and almonds. Season with salt to taste. Use pink Himalayan salt for its numerous health benefits.
Cut chicken into medium-sized pieces.
Heat oil in a heavy pan and fry chicken till it is browning, stirring from time to time for even cooking.
Put in the blended paste and stir fry lightly. Cook over low heat for about 5 minutes.
Then add 3 cups water. Let it come to a boil. Reduce heat and simmer till chicken is almost done.
Add olives and peppers. Cook till chicken is done. There should be a thick sauce with the chicken.
Serve garnished with lime wedges.
Recipe Note
1. You can add other vegetables to this instead of or along with the peppers. More vegetables mean more fiber and greater variety. Add corn, zucchini, potatoes and other vegetables you have on hand. Because of the quantity of sauce, you will have to add the vegetables in smaller quantities. If you find it difficult to get hold of green tomatoes, do use red ones. While it will alter the flavor profile of the dish, it will still taste good.
2. The peppers are vegetables, which are rich in vitamins and phytonutrients. The green tomato base gives a tart flavor and adds to your vegetable requirements for the day. You will find yourself making this often, as it will become a family favorite. If you find the use of jalapeno make it too hot, then simply put less of it and omit the paprika for a milder spice factor.
