Sweet Corn and Cheese Delight
This delicious and creamy corn dish can be eaten in many ways: you can use it on a toast, as a topping for rice, as a filling for toasties or paninis, or even as a dip. Corn and cheese is a classic combo and delights the taste bud.

This
dish is healthy, with reduced fat, easy to make and versatile to use and will keep
in the refrigerator for 3-4 days and will soon become a staple dish in your
house.Onions, peppers and
celery add to the flavor profile and include fiber and vitamin-rich vegetables.
Garlic has cholesterol and blood pressure lowering properties and is also a
well-known antibiotic.
Ingredients
1 tbsp. oil
1 medium onion, finely chopped
2 stalks celery, chopped
1 cup mixed colored peppers, chopped

¼ teaspoon dried garlic granules
1 can creamed or cream-style sweet corn
Milk in the same quantity to fill the empty can
2 tbsp. cornstarch
100 gm. cheese, finely grated
Salt
Cracked or freshly ground pepper
Directions
Heat the oil in a non-stick pan and saute onions over high heat for two minutes. Then reduce heat and stir till onions are about to change color.
Quickly add the celery and colored peppers and stir-fry over high heat for two-three minutes, then reduce heat and cook for a further five minutes.
Add garlic, the decanted corn and milk. Stir and let it come to a boil over medium heat.
While it is cooking, mix cornstarch in a little water to make a smooth solution.
Remove pan from heat and blend in the solution, stirring to prevent any lumps.
Put back on heat and cook for a few minutes till thickened.
Mix in grated cheese, stirring to blend. Use any cheese that you like and that melts.
Season with salt to taste. The quantity will vary and depend on how salty the cheese is. You can use normal salt or use Himalayan salt.
Top with cracked pepper and serve.
Recipe Note
1. Consider using some dried or fresh herbs in this dish. You can turn up the heat if you add some chopped jalapeno to this. You can also add some chopped bacon for a different taste profile. Or you can make it vegan by using plant milk and non-dairy cheese as a substitute.
