Directions
Soak grated garlic in lemon juice for 10
minutes.
In a small food processor or with a mortar and
pestle, grind red chili flakes together with the olive oil until you make a
paste-like consistency.
Mix together red chili oil, soaked
garlic and mayonnaise in a small bowl.
Serve with fresh vegetables as a
crudité platter or use as a condiment on a sandwich.
Recipe Note
Soaking the garlic in lemon juice helps to
subdue its flavor, which most people prefer, but if you enjoy a stronger garlic
flavor then just skip the soaking step.
