Orange Cardamom Coffee Cake Recipe

This decadent, moist cake has a light textured crumb and powerful scents of citrusy cardamom will delight your senses. Coffee cake is so simple and quick to prepare, but the depth of flavor will be a pleasing surprise
Ingredients
½ cup butter, softened
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt

10 organic cardamom pods, smashed
1 teaspoon orange zest
½ cup milk
Directions
Pre-heat oven to 350 degrees Fahrenheit. Line the bottom of a 6” cake pan with parchment paper and oil the sides of the pan.
In a small saucepan, combine cardamom pods and milk. Bring to a simmer over medium heat. Remove from heat, cover and steep for 10 minutes. Strain the mixture through a sieve to remove the pods.
With an electric mixer, cream butter with sugar and orange zest. Beat in egg and vanilla.
Whisk flour, baking soda, baking powder and salt together in a medium bowl.
On low speed, add about half of the dry ingredients to the butter mixture, alternating with the milk, and ending with the rest of your dry ingredients.
Mix until smooth.
Pour into a prepared cake pan and bake for 20-30 minutes or until the cake springs back when lightly poked in the middle.
Recipe Note
Notes of molasses, from the brown sugar, pairs beautifully with the spice and citrus zest. This orange cardamom coffee cake is perfect to serve at brunch or tea, but it would also be delicious served with a scoop of vanilla ice cream for dessert.
