Seasoning boosters such as miso, onion and lime lend tangy, deep umami flavors to this spinach-based dressing. An easy recipe as it requires zero cooking, only a blender and a small amount of time to succeed in creating a versatile sauce you will want to pair with many other foods.
½ cup cashews, toasted
1 tablespoon light miso paste
1-pound frozen spinach, thawed
1 teaspoon salt
2 tablespoons organic onion granules
½ cup olive oil
Lime, juiced
Place toasted cashews and organic onion granules in a blender.
Add just enough hot water to cover the cashews. Allow to soak for 30 minutes.
Add miso and lime juice to the blender, pulsing until well blended and the cashews are finely ground.
Add thawed spinach and continue pulsing until you reach a smooth consistency.
On low speed, steadily and slowly drizzle in the olive oil and blend until emulsified.
Season with salt and adjust to your liking.
